Some days I’m not that hungry, others I’m ravenous. Last Thursday was the later. I decided to bake myself something that could double as a pudding and a snack; something with ingredients that will fill me, give me energy but most importantly taste damn delicious.
Now I’ll be honest, I didn’t measure the majority of the ingredients in this cookie creation. I added the things I fancied eating, taste tested (maybe a little too much cus I think I ate half the mixture #sorrynnotsorry) and experimented until I achieved a consistency I was happy with, i.e cookie dough.
This is one smart cookie
Oats: a source of beta-glucan (a source of soluble fibre) to fill you up and reduce cholesterol and blood sugar levels.
Buckwheat: naturally gluten free, high in fibre and a source of easily digestible protein.
Vegan protein powder: snacks high in protein slow your digestion, fill you up and balance blood sugar levels.
Pecans: 9 g protein per 100 g, monounsaturated fats for heart health and a rich source of fibre.
Coconut oil: increases good (HLC) cholesterol to reduce the risk of heart disease and is anti-microbial to fight acne, tooth decay and bad gut bacteria.
Cacao nibs: a source of healthy fat and full of antioxidants.
Maca: great for balancing hormones and high in B vitamins for energy.

Camu who? 🤷
Camu camu is native to Brazil, Peru, Columbia and Venezuela where it grows beside the Amazon river. This fruit is the size of a lemon with the hue of an orange. The best thing about camu camu is definitely not its taste (it’s rather sour) but its antioxidant properties, particularly the fact it is THE BEST SOURCE OF VITAMIN C IN THE WORLD!!!
¼ cup oats
¼ cup buckwheat flour
¼ cup almond flour
1 scoop vegan vanilla protein powder
Pinch pink salt
Handful pecans broken up
Small handful cacao nibs
1 flax egg
1/3 cup coconut oil
1 tsp maca
¼ tsp camu camu
Splash almond milk
This couldn’t be easier…
- Mix all the ingredients in a bowl.
- Play with the consistency (more milk/flour) until a slightly wet cookie dough forms.
- Eat raw or cooked at 200 c for 10-15 mins.
