Acai you there…liking your lips.
Ah the acai berry. Native to central and south American the acai berry is considered one of the best beauty foods due to its rich antioxidant, vitamin and mineral content. It is definitely a staple in my cupboard.
WHY EAT ACAI?
💜GLOWING SKIN packed full of antioxidants like vitamin C to help prevent ageing and one of the best ingredients to naturally treat hyperpigmentation, scars and acne
💜DIGESTIVE HEALTH traditionally acai juice is used to treat diarrhoea as it’s full of fiber for healthy bowels
💜CHOLESTEROL & HEART HEALTH high in anthocyanins (antioxidants) that promote heart health, plus studies have found eating acai can lower blood sugar, insulin and cholesterol levels
💜WEIGHT LOSS fibre + fatty acids = increased metabolism and fat burn, and decreased cravings
Acai berries have a pretty unique nutritional profile for a berry; they’re higher in healthy fats and much lower in sugar (most berries contain around 40-50g of sugar per 100 g but acai berries contain around only 2g!), making them a great addition to anyone’s diet, even diabetics and those with IBS.
I was soooo happy to discover that acai berries are low FODMAP and I could still enjoy my beloved acai smoothie bowls! But now that it’s winter, all I am craving on these cold, grey, rainy mornings is a bowl of warming porridge. However, eating porridge every day gets a bit boring so I like to switch between standard oat porridge, zoats (zucchini oats), buckwheat groats and quinoa porridge. Not only will changing things up stop you getting bored, it’ll also ensure your body is receiving a wide variety of nutrients.
¼ cup quinoa
½ cup coconut milk
1 heaped tsp acai powder
Handful blueberries (I used frozen)
1 tbsp orange zest
¼ tsp cinnamon
1 tbsp hemp protein (optional)
Toasted pumpkin seeds
- Rinse the quinoa then add twice as much water as quinoa (about ½ cup) to a pan and cook on a medium heat until bubbling, then lower the heat and simmer for about 15 minutes or until all the quinoa has ‘popped’, become fluffy and soaked up the water. Keep an eye on it, you may need more water.
- Add the milk, blueberries and acai and stir. Let the berries breakdown and let the milk heat up for a minute or 2.
- Then add the cinnamon, hemp and orange zest. Stir.
- Serve and top with orange slices, toasted seeds and nut butter.
Now that’s something I’d like to spoon 😜
