Do you know what day it is? IT’S MY BIRTHDAY!!! And no, I’m not 14, I’m not doing my GCSE’s and I don’t need my parent’s permission… I’m 24! [& certainly not passive aggressive about constantly being mistaken for a school child.]
I was actually due to be born on Halloween (which may explain a lot) but if I had my way I’d definitely have a summer birthday; a birthday without talks of Halloween, whispers of Christmas, gloomy skies and a lack of fresh berries.
Whilst trying to find inspiration for my birthday cake I discovered a distinct lack of ‘healthy’ IBS friendly cakes that were dairy and gluten free but still looked and sounded delicious. So, I shall be winging my birthday cake recipe and hoping for the best.
Originally, I planned on making a 3 berry Swiss roll but strawberries are no longer in season and the ones in the supermarket are a bit hit and miss.
Then I thought about creating an epic raw vegan, chocolate caramel layer cake but then I had to acknowledge the fact that I wouldn’t be able to control myself and I’d devour the whole thing, flare up my IBS and be in pain for the rest of the day/year. Plus, no one else in my family likes raw vegan desserts because they’re weirdos with no sense of taste.
After much deliberation, I have decided to make a blueberry and lemon sponge cake with blueberry chia jam and coconut yogurt frosting. Decorated with tropical fruit and raw chocolate buttons.
Anyway, enough waffle… LET’S EAT CAKE!
