Sometimes I get into a food rut. My go to lunch is eggs, avocado and as many vegetable as I can fit on my plate but recently I have felt like experimenting, creating new recipes and expanding my diet. After all, the more varied your diet is the healthier your gut flora, and therefore overall health, will be.
I thought about the food I used to love and the first thing that came to my mind was a cheesy toastie. Despite never being a big fan of sandwiches, I did love a toastie; it was so simply yet so comforting. I remember the day my mum first introduced my sister and I to toasties, from the first bite I was hooked; the crunch of the toast contrasting the gooey melted cheese.
Since cleaning up my diet toasties haven’t really featured on the menu, until now. This is a toastie upgrade; a healthy, nutritious version that offers the same satisfaction with the added benefit of nutrient dense ingredients.
1 garlic clove
1 tbsp cashew nut butter
Juice of ½ a lemon
1-2 tbsp nutritional yeast
1 tsp dried basil or a bunch of fresh basil
4 tsp water
Pinch pink salt & black pepper
Blend until smooth. Taste & adjust the seasoning to your liking.
I ate this for my lunch the other day spread on homemade paleo bread with pan fried red onion, mushrooms, tomatoes and fresh rocket. After assembling all the components I popped it under the grill for a few minutes and had myself a nostalgic tasty toastie.
This cheesy, creamy sauce doesn’t only taste great in a toastie. Try it on pizza, pasta or in an omelette.
