Don’t just taste the rainbow, toast the rainbow.
Hummus is awesome. Perfect for dipping veggie sticks in, dolloping on wraps, spreading on toast, mixing into pasta dishes and of course accompanying falafels. Plus, you can never get bored of hummus because there are hundred of flavour combinations: roast red pepper (one of my favourites), caramelised onion, beetroot, avocado, garlic and rosemary…the list goes on.
*I personally prefer to use original versions over ‘fat reduced’ because 9/10 times the fat (which isn’t even bad for you) is replaced by something artificial or a thickener like corn flour. I’d rather eat a little more olive/rapeseed oil than corn flour but it’s up to you.
Right, toast time. Let’s spread some colour and paint the toast red…and orange, green, blue and pink.
Selected your preferred toast, I went for sweet potato, then get your hummus, 5 mini bowls/large plate to mix the colours and a spoon. [You’ll need to rinse the spoon between mixes to avoid colour transfer.]
1 tsp hummus + squeeze of tomato paste/puree
1 tsp hummus + pinch turmeric & ¼ tsp paprika (smoked or plain)
1 tsp hummus + ¼ tsp matcha or a pinch spirulina
1 tsp hummus + ¼ tsp butterfly pea powder*
*You could sub for purple cabbage water & baking soda. The cabbage reacts with soda and turns blue. Natural blue food colouring tutorial here.
1 tsp hummus + few drops beet juice/beet puree
My favourite combo was definitely the turmeric and paprika with the sweet potato but they all tasted damn good.
I served my rainbow sweet potato toast with rainbow vegetables (carrot, purple cabbage, rocket and kale) a drizzle of apple cider vinegar, a squeeze of lemon, homemade falafels and a sprinkling of pink salt and black pepper.
Sorry there is no gold at the end of this rainbow but there is a wealth of health benefits.

P.s What’s your favourite hummus flavour? Also, can anyone tell me the official way of spelling ‘hummus’ because I have seen it spelt so many ways; humous, houmous, hummus, humus????
Perhaps it’s a spy spread, with various aliases: “hello dear fellow tis I Sire Humous”. “Bonjour je m’appelle Houmous”. “Y’all Hummus in da house”. “G’day, I’m Humus or Steveo the spread to the locals”.
